We send you to White Whale, downtown's craft cocktail bar, a bartender-owned craft cocktail bar on the corner of Las Vegas Boulevard and Fremont East. It shares our soul. The two bartenders behind it spent years mastering their craft in the finest rooms in the city before opening their own, and they approach a cocktail exactly as we approach a sauce — with fresh-squeezed juice, house-made syrups and a refusal to take shortcuts. There is real savoir-faire in that glass.
The room itself would not feel out of place beside a fine French table. It is minimalist and warm, built of stone, leather and natural wood, lit in soft gold — an intimate, grown-up space that flatters good conversation and a slow drink. One does not gulp here; one savors, the way one ought to savor the final hour of a memorable evening.
And for the guest who delights in surprises — and what diner who chooses French cuisine does not? — there is a hidden room called the Captain's Quarters. The menu disappears, and the bartender composes a drink around your mood alone: bright or brooding, smoky or crisp, bone-dry or gently sweet. It is the cocktail equivalent of a chef's tasting menu, an act of trust between maker and guest. We find it utterly charming, and entirely in keeping with the spirit of a proper French evening, where the best moments are often the ones you did not order.
